Ingredients
(Serves 2–3):
1/2 cup dry quinoa (rinsed)
1/2 cup dry red lentils (rinsed)
1 tbsp olive oil or coconut oil
1/2 small red onion, finely chopped
2 cloves garlic, minced
1 tsp ground turmeric
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp sea salt (plus more to taste)
2 cups vegetable broth (or water)
2 cups spinach or kale, chopped
Juice of 1/2 lemon
Optional toppings: avocado slices, pumpkin seeds, fresh parsley
Instructions
:
In a medium pot, heat oil over medium heat. Add onion and sauté for 3–4 minutes until soft.
Stir in garlic and spices (turmeric, cumin, coriander). Let them bloom in the heat for 1 minute.
Add quinoa, lentils, broth, and salt. Bring to a boil, then reduce to a gentle simmer.
Cover and cook for 15–20 minutes, until the quinoa and lentils are tender and liquid is absorbed.
Stir in the spinach or kale and let wilt. Finish with a squeeze of lemon.
Serve warm with toppings of choice.
